Classic Hunan-Style Stir-Fried Pork with Scallions

Farmhouse Stir-Fried Pork

Ingredients

250g pork, 1 onion, a pinch of flour, 2 small chili peppers, 1 green and red bell pepper, 8-9 Sichuan peppercorns, peanut oil as needed, a dash of oyster sauce, salt to taste, vinegar to taste, 2-3 dried black mushrooms, soy sauce to taste, a pinch of cornstarch, a small piece of ginger.

Cooking Method

1. Rinse the pork, slice it thinly, then marinate with cornstarch, soy sauce, and salt for about 10 minutes.

2. Wash the onion, halve it, and remove the core. Lightly dust the onion halves with flour and set aside.

3. Prepare the remaining ingredients.

4. Heat oil in a wok until medium-high. Add meat and stir-fry until cooked through. Add a splash of vinegar during cooking to help the meat separate easily. Transfer cooked meat to a bowl and set aside.

5. Using the remaining oil in the wok, stir-fry the onion briefly. Remove and set aside.

6. Heat oil in the wok again. When the oil is moderately hot, add Sichuan peppercorns and stir-fry until fragrant. Remove the peppercorns, then add ginger, green and red chili peppers, and black fungus. Stir-fry until fragrant.

7. Add the onions and cooked meat back into the wok. Turn up the heat and stir-fry vigorously. Quickly add salt, oyster sauce, and MSG. Toss everything together a couple of times, then plate immediately!
