How to Make Cantonese Ginger-Scallion Crab: A Wok-Tossed Classic

【Ginger and Scallion Stir-Fried Crab】

Ingredients:

3 flower crabs

Ginger and scallions (to taste)

Oil (as needed)

Cornstarch (a little)

Salt (a little)

Light soy sauce (a little)

Oyster sauce (a little)

Method:

1. Prepare ingredients.

2. Soak crabs in salt water briefly to expel sand.

3. Scrub crabs clean with a brush, especially the underside

4. Crack open shells and remove all innards

5. Rinse thoroughly

6. Halve crabs; crack claws with knife back for better flavor absorption

7. Marinate crabs with salt and starch for 5 minutes; chop ginger and scallions into sections

8. Heat oil in a wok until 80% hot.

9. Briefly pan-fry the crab until it changes color, then remove.

10. Retain the wok oil and stir-fry the ginger and scallions.

11. Add the crab back in and stir-fry over high heat.

12. Pour in the sauce mixture (salt, water, light soy sauce, oyster sauce) and toss to coat.

13. Stir-fry until the sauce thickens, then serve.
