【Storm Shelter Stir-Fried Crab】

Ingredients: 7 hairy crabs
Marinade: 2g salt, 10g cooking wine
Breading: 150g breadcrumbs, 40g cornstarch
Seasonings:
50g onion, 20g ginger, 20g fermented black beans, 10g dried chili peppers, 4g salt, 10g sugar, 10g light soy sauce, 0.5g white pepper powder
Method
Method 1
Step 1: Insert scissors or chopsticks into the crab's mouth.
Step 2 Clean, remove gills, shell, heart, and cut into two halves.
Step 3 Marinate with salt and cooking wine for 20 minutes.
Step 4 Heat oil in a wok to 60% heat. Fry breadcrumbs until golden brown, then drain.
Step 5 Coat hairy crabs with starch.
Step 6: Heat oil in a wok until 60% hot, add crab and fry until 80% cooked.
Step 7: Prepare onion, ginger, and fermented black beans.
Step 8: Finely chop onion and shred ginger.
Step 9: Cut dried chili peppers into segments.
Step 10: Heat oil in a wok until 60% hot, stir-fry onion, ginger, and fermented black beans until fragrant.
Step 11: Add the hairy crabs, then season with salt, sugar, light soy sauce, and white pepper powder.
Step 12: Stir in the dried chili segments until evenly coated.
Step 13: Toss with the fried breadcrumbs, mix well, and plate.
Method Two
Main Ingredient: Sea Crab
Supporting Ingredients: Dried Chili Peppers
Seasonings: Salt, sugar, minced garlic, chicken bouillon, cornstarch, cooking oil
Preparation Steps
Step 1: Clean the sea crab, chop into chunks, and coat with cornstarch.
Step 2: Heat oil in a wok. Add crab chunks and minced garlic, frying until golden brown. Remove crab chunks and drain. Remove garlic and drain oil.
Step 3: Leave oil in the wok. Add dried chili peppers, minced garlic, salt, and sugar (salt to sugar ratio 1:5). Stir-fry with chicken bouillon and crab chunks until combined.
Method Three
Main Ingredient: Meat Crab
Supporting Ingredients: Minced garlic, sesame seeds
Seasonings: Salt, MSG, sugar, cooking wine, fermented black beans, dried chili peppers
Step 1: Cut crab into chunks. Marinate briefly with salt, cooking wine, and cornstarch.
Step 2: Heat sufficient oil in wok. Fry minced garlic until lightly golden, then add dried chili peppers and fry until fragrant. Remove garlic. Fry crab chunks until golden brown, then set aside.
Step 3: Leave a little oil in the wok. Add fermented black beans, fried garlic, and chili peppers. Season with salt and sugar, stir-fry. Add the fried crab pieces and toss to coat evenly. Add MSG, then remove from heat.
Method Four
Main ingredient: Seafood crab. Supporting ingredients: Diced green peppers, diced red peppers, minced ginger, fermented black beans (small amounts each).
Seasonings: Salt, sugar, minced garlic, chicken bouillon, cornstarch, cooking oil, Shaoxing wine.
Step 1: Clean the crab and chop into chunks. Coat with cornstarch.
Step 2: Heat oil in a wok. Once hot, add crab chunks and minced garlic. Fry until golden brown, then remove crab chunks. and remove the garlic for draining;
Step 3: Leave some oil in the wok. Add dried chili peppers, minced garlic, salt, and sugar (ratio 1:5). Add chicken bouillon and stir-fry with the crab chunks.
Tips:
1. You can add 2 teaspoons of ginger slices and scallion segments to stir-fry, making it into Ginger Scallion Crab;
2. Crab can be substituted with shrimp or bullfrog.
3. This recipe involves deep-frying; prepare approximately 500g of peanut oil.
Method Five
Main Ingredient: One large meat crab
Supporting Ingredients: Scallion segments, minced ginger, 50g minced garlic
Seasonings: Breadcrumbs, cornstarch, fermented black beans, light soy sauce, yellow rice wine, sugar
Step 1: Pour 20ml of white wine into the crab's mouth. Once the crab is “drunk,” scrub its body clean and divide it into 5 sections.
Step 2: Lightly marinate the separated crab pieces in white wine. Coat all pieces with starch and set aside.
Step 3: Soak minced garlic, minced ginger, chopped scallions, and fermented black beans in oil for one day.
Step 4: Heat a generous amount of oil in a wok until 80% hot. Add crab meat and minced garlic, frying until fragrant before removing.
Step 5: Leave some oil in the wok. Add the marinated seasonings from Step 4 along with crushed dried chili peppers, stir-frying until aromatic.
Step 6: Add the fried crab meat, light soy sauce, 1 tablespoon sugar, and Shaoxing wine. Continue stir-frying until well-seasoned.
Step 7: When the garlic turns golden brown, add some breadcrumbs for color.
Step 8: Once the breadcrumbs are fully incorporated and flavored, remove from heat and plate.
Method Six
Ingredients: 3 Yangcheng Lake hairy crabs, 2 garlic cloves, 3 slices ginger, salad oil as needed, red chili peppers as needed, light soy sauce as needed, salt as needed, scallions as needed, cornstarch as needed;
Preparation Steps
Step 1: Thoroughly clean the Yangcheng Lake hairy crabs, garlic, and ginger. Mince the garlic and ginger separately.
Step 2: Heat oil in a wok. Add minced garlic and ginger, stir-fry until fragrant, then remove and set aside.
Step 3: Trim off the large claws and legs. Scrub the crabs thoroughly inside and out with a brush.
Step 4: Scrape off the crab hair, crush the claws, lift the crab shell, and remove the gills, stomach, and crab heart.
Step 5: After processing, cut the crab in half lengthwise and coat the cut surface with dry starch.
Step 6: Deep-fry the crab in hot oil until 80% cooked, then remove and set aside.
Step 7: Add minced garlic and dried chili peppers to the oil. Once fragrant, return the crab to the pan and stir-fry.
Step 8: Maintain high heat. Add light soy sauce to taste; add sugar if you prefer a sweeter flavor.
Step 9: Continue stir-frying until the garlic coats the crab. Turn off the heat, sprinkle with chopped scallions, and serve.
