1. Knead dough with lukewarm water until smooth and elastic. Let rest. Chop scallion whites and greens separately.


2. Rinse the lentils thoroughly, then add them to a pot. Add an appropriate amount of baking soda and simmer.

3. While the lentil soup simmers, roll out the rested dough into flatbreads and let them rest for a while.

4. Once the mung beans are simmered until the liquid evaporates, stir-fry them.

5. After dry-frying briefly, pour in boiling water. Once it comes to a boil, reduce to low heat and simmer until the beans are tender. Due to the added baking soda, the broth will darken the longer it simmers.

6. While the beans simmer, arrange the cooled dough sheets and cut them into diamond shapes.

7. Test bean tenderness with chopsticks. Once soft, add the noodles and stir gently to prevent sticking.

8. When noodles are cooked, add chopped scallion whites and greens. Mix ginger powder and seasoning powder, then drizzle with hot oil to release fragrance. Stir well before serving.
