Northwest-Style Lamb Shank with Fragrant Herbs

Melt-in-your-mouth lamb, every bite fragrant

Main Ingredients  Lamb 200g  Moss Mushrooms 50g  Buckwheat Noodles 150g  

Supporting Ingredients  Green Pepper Strips 5g  Red Pepper Strips 5g  

Seasoning Ingredients  Scallion Segments 5g  Ginger Strips 3g  Minced Garlic 5g  

Seasonings  Steamed Fish Soy Sauce 5g  Chicken Powder 8g  Concentrated Chicken Broth 5g  Salt 1g  Dark Soy Sauce 3g

Cooking Steps

1. Slice lamb and set aside.

2. Soak moss mushrooms in water for 1 hour. Rinse off sand, drain, and set aside.

3. Blanch main ingredients in boiling water, then set aside.

4. Heat oil in wok. Stir-fry seasonings until fragrant. Add main and secondary ingredients, then seasonings. Stir-fry over high heat until done. Serve immediately.
