The preparation methods for the above four dishes are as follows:
1. Sweet and Sour Pork Tenderloin
Cut pork tenderloin into small pieces and soak in water for 5 minutes. Sprinkle with an appropriate amount of pepper and salt, then mix thoroughly by hand. Add cornstarch (adjust quantity as desired; a bit more is fine), gradually incorporating water while mixing until the starch coats the meat slices evenly. Let rest for 10 minutes. Fry in oil heated to 60% heat until golden brown, then remove and set aside on a plate. For the sauce: Combine water, sugar, white vinegar, salt, cornstarch, and light soy sauce in a bowl until smooth. Heat oil in a wok, pour in the sauce mixture, and stir over low heat until translucent. Add the fried pork, toss to coat evenly, then remove from heat immediately.

2. Stir-Fried Shrimp with Cucumber and Carrot
Devein the shrimp, slice them, and set aside on a plate. Wash the cucumber and carrot, cut into small pieces, and blanch them. Heat oil in a wok. First stir-fry the shrimp until cooked. Add the blanched cucumber and carrot pieces. Season with salt and chicken bouillon to taste. Stir-fry until well combined, then remove from heat.

3. Ginger and Scallion Duck Blood
Purchase pre-cut duck blood blocks, rinse thoroughly, and dice into small pieces. Heat oil in a wok. Sauté shredded ginger and white scallion sections until fragrant. Add duck blood and stir-fry briefly. Pour in a small amount of water, cover, and simmer for 1 minute. Stir in light soy sauce and chopped green scallion sections. Toss to combine evenly, then remove from heat.

4. Stir-Fried Bok Choy
Heat oil in a wok. Add washed bok choy and stir-fry until tender. Season with a pinch of salt and chicken bouillon powder before serving.
