Baking powder, salt, ginger powder,
Black pepper powder, extra virgin olive oil, unsweetened soy milk

2Drizzle olive oil in a circular motion while mixing. Use your fingers to rub the oil into the flour until fully absorbed.
3Add soy milk and mix well. Incorporate green olives and chopped assorted nuts.
4Shape the dough into an oval resembling European-style bread.
5Place in a preheated 170°C (340°F) oven and bake for 20 minutes, until the surface is slightly firm. Remove from the oven.
6Let the dough cool for 5 minutes, then slice it into 1cm (0.4 inch) thick pieces.
7Reduce oven temperature to 150°C (266°F). Bake for 20 minutes, flip, then bake another 20 minutes until both sides are evenly golden.
Italians use biscotti to represent all types of cookies. These twice-baked, long, crisp cookies pair wonderfully with soups and tea.
