Pea Pudding

- Ingredients -
Pea Pudding: 125g peeled pea flour, 350ml water, salt to taste
Garnish: Shredded cucumber, shredded red radish
Topping: Goji berries
Dipping Sauce: Apple cider vinegar, white miso paste
- Steps -
1. Prepare ingredients. Weigh peeled pea flour and water separately.
2. Mix the peeled pea flour with water until smooth and lump-free, resembling soy milk.
3. Pour into a pot and bring to a simmer over medium heat.
4. Add salt to taste. Stir constantly with a spoon to prevent sticking to the bottom. Once the liquid evaporates and the mixture begins to form a paste, reduce heat to low. Continue cooking until thick and paste-like, then remove from heat.
5. Prepare a mold.
6. Pour the thick paste into the mold.
7. Remove from mold after cooling and setting.
8. Cut into strips and serve with accompaniments.
9. Toss with shredded cucumber and red radish, season with apple cider vinegar and white miso, garnish with goji berries, and mix well before serving.
