Homestyle Colorful Tofu

- Ingredients -
Firm tofu, sweet corn
Sweet peas, dried shiitake mushrooms
Carrot, oil, salt
Light soy sauce, cornstarch, sesame oil
-Method-
1. Soak dried shiitake mushrooms in cold water until softened. Peel and dice carrots. Thaw sweet corn and peas. Cut firm tofu into small cubes.
2. Heat oil in a wok. Add carrots and mushrooms, stir-fry briefly. Add sweet corn and peas, tossing evenly.
3. Pour in boiling water until it just covers the tofu. Season with light soy sauce and salt to taste. Cover and simmer for 10 minutes.
4. Thicken with cornstarch slurry. Drizzle with sesame oil before serving.
