Home-Style Lotus Root Cubes

- Ingredients -
Lotus root, carrot
Vegetable oil, vegetarian satay sauce
Ginger, minced pickled chili peppers
Light soy sauce, aromatic vinegar
Salt, high-quality seasoning powder to taste
-Method-
1. Peel lotus root with a peeler or metal spoon, cut into long strips, then dice.
2. Peel carrot using same method and dice.
3. Lightly smash ginger, then chop into coarse pieces.
4. In small bowl, combine soy sauce, rice vinegar, pickled chili, and satay sauce. Stir until blended.
5. Heat oil in a wok, then stir-fry ginger until fragrant.
6. Add lotus root and carrot cubes simultaneously.
7. Stir-fry over high heat until 80% cooked (lotus root turns translucent).
8. Pour in the prepared sauce mixture.
9. Continue stir-frying until lotus root is fully cooked. Season with salt and Wai Chuan High-Fresh seasoning to taste, then serve immediately.
