Stir-Fried Yam, Pumpkin, and Wood Ear Mushrooms

- Ingredients -
100g yam
100g pumpkin
100g rehydrated wood ear mushrooms
Green chili pepper
Minced ginger
Vegetarian oyster sauce
Salt to taste
- Method -
1. Peel and slice the yam. Place in cold water to prevent oxidation and discoloration.
2. Peel and slice the pumpkin. Soak the wood ear mushrooms until softened, then tear into small pieces.
3. Heat oil in a wok. Once hot, add minced ginger and stir-fry until fragrant.
4. Add the yam slices and stir-fry briefly.
5. Add the pumpkin slices and wood ear mushrooms. Stir-fry until slightly tender. Season with vegetarian oyster sauce and salt.
6. Finally, add green chili peppers to taste.
